Hello Everyone. Happy Monday! Hard to believe we will be at the middle of October by the end of this week. This is the time of year when our family settles in and enjoys cooking together. We’re always looking for new ideas… I’ll share a recipe we tried this weekend for an apple puff pancake in the comments. If you have any favorite recipes, please share them back!
Last week I told you we would be having a team lunch on Wednesday. That is NOT going to happen this week due to conflicts with the Educator Network Professional learning that afternoon. We will reschedule…
Elementary Educator Network Sessions
(copied from the Elementary Curriculum and Instruction Blog)
In effort to help everyone feel safe during this time of high covid transmission, changes have been made to the schedule and location for several October 13th sessions.
Virtual sessions: 1:30-3:00
In-person sessions: 2:00-3:15 (session shortened to allow for travel)
K-1 teams will meet together in an assigned location in your building. These sessions will take place from 1:30-3:00 and will be facilitated by your administrator, instructional coach and/or reading interventionist.
Please remember to sign up for Elementary Educator Network sessions on Performance Matters – Employee.
In Other News…For those interested, here is a Vaccine Q & A Session Video with Steve Herron (Director of HR) and Steve Cook (Superintendent) discussing the vaccine requirement for all staff.

And for fun:

Apple Puff Pancake:
3 eggs
3/4 cup flour (can be gluten free)
3/4 cup milk
1/2 tsp. salt
3 T butter
2 T sugar
1/4 t cinnamon
2+ apples, thinly sliced
Preheat oven to 400. Slice apples, place them in a skillet with butter, cinnamon and sugar. Put this in the oven while it preheats and you prepare the pancake batter.
In a blender combine other ingredients. Beat on medium speed for 1 minute. Remove the skillet from the oven and pour batter over it. Bake uncovered for 25 minutes or until pancake is puffy and golden. Serves 4.
Yum!
That looks amazing, Amy! Thank you for sharing 🙂 In the fall I eat (almost exclusively) beets, sweet potatoes and pumpkin. I can’t even begin to nail down a single recipe….likely because I only use recipes when I bake. So I will send my new favorite brownie recipe. Don’t be afraid of the secret ingredient…

That’s right, black bean brownies. Let me know if you try them 🙂
So down for these! Can’t wait for the weekend to try! Thanks! 😀
I might have to try those black bean brownies, too! I’m an adventurer! 😉
